This sturgeon caviar comes from wild Hackleback Sturgeon from the Mississippi River. The roe is small, around 2mm in size and ranges in color from dark gray to jet black. The eggs are firm and have an intense, nutty taste, comparable to Caspian Sea Sevruga Sturgeon. This caviar comes in a traditional glass jar with a sealed lid.
